Salt as need

Water

2 Pinches Asafoetida { Hing }

2 Pinches Soda-Bi-Carb

3/8 Cup Chickpea Flour { Gram Flour / Besan }

2 Tsp Sugar

4 Cup Thick Whisked Yogurt

2 Tsp Red Chilli Powder

2 Tsp Mustard Oil + few extra for shallow frying

1/4 Tsp Cumin Seeds

1/8 Tsp Powdered Mustard Seeds

Preparations

Besan Ka Chilla Raita preparations steps are as below.

First we need a bowl to combine Chickpea Flour, Salt, half Red Chilli Powder, Mustard Seeds & Cumin Seeds. Now we add sufficient Water for making thick batter. Now we whisk thoroughly to remove lumps. Add the Soda-Bi-Carbonate . Whisk very well again. Now we heat a wok by applying few Mustard Oil. Shallow fry Red Chillies till golden brown on both sides by applying more oil if needed.

Add half cup of water in Yogurt. Add the remaining Chilli Powder, Salt & Sugar.
Now we add the red chilli to the yogurt. Now we heat oil in another wok. Add the remaining cumin seeds & when they begin to change color then instantly add the remaining powdered mustard seeds and asafoetida. Remove from heat instantly then pour over the yogurt. Garnish with Chopped Coriander. Now eat or serve instantly.
