Salt as need

Black Salt as need

500 Gm Whole Black Gram { Urad Dal }

Mustard Oil for frying

1/4″ Ginger piece very finely chopped

6 Pinch Asafoetida

2 tsp Cumin Seeds { Jeera }

1/4 Tsp Baking Powder

6 Cups Curd { Dhai } beat well till smooth

2 Tsp Powdered Sugar

1/4 Tsp Red Chilli Powder

2 Tsp Roasted Cumin Powder

Green Sauce for accompaniment

Sweet Tamarind Sauce for accompaniment

For Dahi Bhalle Recipe first we wash & soak the Whole Black Gram in sufficient water till overnight then strain. Grind in a mixture in 2-3 batches with Ginger & Asafoetida to a rough paste. Keep scraping the whole black gram on the sides of the mixer while grinding. Transfer whole black gram to a deep pan. Add salt & baking powder. Beat well till the mixture turns whitish & frothy. Add 1/8-1/4 cup of hot water while beating enough to get a soft dropping consistency like that of a cake batter.

Now for Dahi Bhalle Recipe we heat the Mustard Oil in a wok for deep frying. Wet the palm of your left hand. With wet hands make Bhalla with whole black gram into 2″ discs on the wet palm. Sprinkle few Cumin Seeds on it. Press lightly to stick the Cumin & flatten the bhalla. Deep fry 8-10 Bhallas at a time in medium hot mustard oil till they swell. Reduce heat to low. Turn the side. Fry on low medium heat till light golden in color. Drain from oil. Keep aside.

For Dahi Bhalle Recipe now we beat Curd. Add all the ingredients to the curd. Keep aside. Now boil 12 cups Water with 4 Tsp Salt. Remove from water on to a plate. After 5 minutes press out water lightly. Dip in curd. Arrange Bhallas in a flat dish. Pour the remaining curd on the bhallas. Sprinkle sauces over it in circles. Garnish with Red Chilli Powder, Roasted Cumin Powder.

Mustard Oil

Dahi Bhalle Recipe give more taste if we use mustard oil which is also very good for health too. Mustard oil has high levels of both alpha-linolenic acid and erucic acid. Based on studies done on laboratory animals in the early 1970s, erucic acid appears to have toxic effects on the heart at high enough doses.

The pungency of the condiment mustard results when ground mustard seeds are mixed with water, vinegar, or other liquid. By distillation one can produce a very sharp-tasting essential oil, sometimes called volatile oil of mustard, containing more than 92% allyl isothiocyanate. The pungency of allyl isothiocyanate is due to the activation of the TRPA1 ion channel in sensory neurons. Allyl isothiocyanate serves the plant as a defense against herbivores. Since it is harmful to the plant itself, it is stored in the harmless form of a glucosinolate, separate from the myrosinase enzyme.
