2 Kg Pumpkin peeled & cut into cubes
Salt as need
2 Tsp Fenugreek Seeds

Small Lump of Jaggery
24 Tbsp Tamarind Oulp
2 Tbsp Clarified Butter
2 Bay Leaf
1/4 Tsp Onion Seeds
2 Pinches of Asafoetida
2″ Ginger Piece Paste
1/4 Tsp Turmeric Powder
4 Dry Red Chilies
2 Tsp Fennel Powder
6 Tsp Coriander
2 Tsp Cumin Seeds
2 Tsp Coriander Seeds

For preparing heavenly yummy Khatta Meetha Kaddu first we heat the Clarified Butter in a pan then we add Bay Leaf, Cumin Seeds, Coriander Seeds, Fenugreek Seeds, Fennel Powder, Onion Seeds & Asafoetida. Saute for 1-2 minutes. Add the Ginger Paste then we add the Pumpkin. Stir fry for 3-4 minutes.
Mix in the Turmeric Powder, Dry Red Chilies & Salt. Add Coriander Powder. Cook covered on low heat till half done. Add Jaggery, Tamarind Juice, Garam Masala & Green Chilies.
